Creamy Shrimp Pasta

Ingredients

  • ¾ lb fettuccine pasta
  • 1 lb large raw shrimp, peeled and deveined (21–25 count)
  • 1 tbsp olive oil
  • ½ medium onion, finely chopped
  • 2 tbsp unsalted butter
  • 1 garlic clove, minced
  • ⅓ cup white wine (e.g., Chardonnay)
  • 2 cups whipping cream
  • ⅓ cup shredded parmesan cheese
  • ½ tsp sea salt (or to taste)
  • ¼ tsp black pepper (or to taste)
  • ¼ tsp paprika (or to taste)
  • 1 tbsp parsley, finely chopped (for garnish)

Preparation Method

  1. Cook pasta in boiling salted water until al dente. Drain and set aside.
  2. Season shrimp with salt, pepper, and paprika. Heat olive oil in a skillet and cook shrimp 2 minutes per side until opaque. Remove.
  3. In the same pan, melt butter and sauté onion until golden (3–5 minutes). Add garlic and cook 1 minute. Stir in white wine, cooking until reduced by 75%.
  4. Add cream, bring to a light boil, then simmer 2 minutes. Stir in parmesan until smooth. Adjust seasoning.
