Chickpea pasta red sauce

Ingredients
- 500 g passata
- 175 ml dry white wine
- 1 shallot, diced
- 4 garlic cloves, minced
- 1 heaped tbsp mascarpone
- 50 g parmesan, grated
- 1 can chickpeas, drained
- Handful fresh basil, chopped
- 1 tsp black pepper
- Salt, to taste
- Olive oil, for frying

Preparation Method
- Heat olive oil in a skillet over medium heat. Add diced shallot and sauté for 4–5 minutes until softened.
- Add minced garlic and cook for 1 more minute.
- Pour in white wine, let bubble for 1 minute, then add passata. Bring to a gentle boil and simmer 5–10 minutes.
- Stir in mascarpone until well combined.
- Add chopped basil, grated parmesan, and black pepper. Season with salt to taste.
- Let simmer another 10 minutes.
- Toss with cooked pasta, serve hot, and garnish with extra parmesan if desired.
